Zeaxanthin


Zeaxanthin is a carotenoid xanthophyll pigment that can be responsible for the red/yellow colours seen in plants and foods. It is also present in certain types of microalgae and macroalgae (seaweed). The name is a derivative of Zea mays, maize/corn (in which Zeaxanthin is present), and Xanthos (the Greek word for yellow). In maize/corn zeaxanthin represents about 80% of total carotenoids. Zeaxanthin is particularly prevalent in foods such as spinach and kale. There have been studies that show that zeaxanthin (and lutein can prevent macular degeneration or can lead to a slow in the progression of this eye disease which can lead to blindness. Additionally, it has been shown that there is a negative correlation between foods containing carotenoids (such as zeaxanthin) and the risks of a number of cancers.
