Serine


Serine (2-Amino-3-hydroxypropanoic acid) is an alpha-amino acid. It is a polar amino acid, owing to its hydroxyl group, and is a non-essential amino acid. It plays a role in many cellular processes and aids the biosynthesis of nucleotides and phospholipids. Serine is crucial for the catalytic function of certain enzymes.

Catalytic conversion and protein hydrolysis are major modes for the large-scale production of serine. Though many microbial strains can produce serine, an effective bioprocess for large-scale production of serine has yet to be established.

D-serine administration offers neuroprotection and may be considered for the treatment of depression and schizophrenia. L-serine may help people with sleeping difficulty. It is one of the components of the natural moisturizing factors on the skin. Hence, serine can be used in the formulation of skin moisturizing agents.

Serine is involved in the regulation of photorespiration and nitrogen assimilation in plants.

Edible seaweeds, kombu (Saccharina japonica) and wakame (Undaria pinnatifida) are rich sources of serine.
