Aspartic Acid


Aspartic acid (2-aminobutanedioic acid) is an acidic alpha-amino acid. There are two enantiomeric forms of aspartic acid- D and L forms. L- aspartic acid is the constituent of protein, while D-aspartic acid is an amino acid with physiological significance in the human body.

L- aspartic acid holds immense commercial value. It is used to synthesise low-calorie sweetener aspartame and manufacture polyaspartate, a biodegradable hydrogel with various applications ranging from detergent formulation to oil drilling. Acetyl-aspartic acid, an aspartic acid derivative, shows promising as an active compound that can defy skin ageing.

L-aspartic acid is commercially produced by enzymatic conversion of fumaric acid to aspartic acid by L-aspartase. Corynebacterium glutamicum and genetically engineered E. coli are promising microbial sources for the large-scale production of L-aspartic acid.

Green, red and brown algae contain a high concentration of glutamic and aspartic acids. Free amino acids such as alanine, aspartic acid, and glutamic acid in the red algae correlate with the typical umami flavour of red seaweed.
